As the title asks... Would installing my own tie rods alone make my alignment go out of whack? Does it matter as long as they were installed correctly?

Yes changing your tie rods will change your toe setting for your alignment. If you measure the ones currently installed, and adjust the new ones to the same length, it will be close enough to drive carefully (and slowly) to your local alignment shop.
