I'm getting ready to start the long paint process, now heres my question

I see pro shops paint in pieces then assemble, this would be the way Id like to do it, Easier, and I can use the booth at work, so id do the doors, hood, deck, fenders etc etc... Plus you can do all the insides and backs etc.

Then later do the body proper,

OR does that look weird, or should I do each, and then sand it all together after?

IMO disassemble.

It really depends on the type of paint and color.
Some paints like metallics, metal flakes, pearls and some colors like silver and gold are better painted all at once. They are more likely to have some visible differences between parts when you panel paint.

disassemble, paint, assemble, then shoot it all again for a perfectly seamless appearance.
