The fans will be your biggest concern. How much power do they draw? You'll also need to be concerned with the total draw of all your additional items. You'll stock fuse panel will be hard pressed to take more than 10 additional amps and maintain decent voltage.

I'd recommend using a relay for the fans and a relay for the fuel pump and wire them to the battery. You can turn the relays on with ignition power, a temp switch or manual switch. If you need a wiring help, let us know.

As for the gauges, you can pull power for them from the fuse panel. There is also a connector on the fuse panel for the dash lights that is controlled by the dimmer switch.
