So i bought myself a LS1 5.7 and a T56 trans. I bought some engine mounts from summit racing but it made the engine sit very low and too far forward.

Which engine mounts would be best if i want my engine to sit higher and further back?

You should use the short and wide mounts. If you want to move your engine location, it would be accomplished with adapter plates. Dirty Dingo makes adjustable adapters for just that purpose....
