Do I need a PVC valve on one of the valve covers? Someone told me that I don't need one and can just run a breather on each side.

PVC is plastic pipe...I think you meant PCV

I would not recommend a Poly vinyl chloride valve. An engine compartment is not a good environment for it. I think all street cars should have a positive crankcase ventilation valve though. Not only will the engine live longer due to fewer contaminates in the engine oil, you can also make more horsepower by reducing crankcase pressure.
