I researched the archives for a cooling fan and came up with using the Taurus 3.8 fan. There were also some suggestions for relays. Now the question is, will my 80 amp delco alternator handle that Taurus fan or any aftermarket fan that draws big amps?

It depends on what else you have, but if it is only the fan, yes.
