Hey. I think I may need a new power steering pump. Reason is that it has burnt fluid in it and I want to stay ahead of it. Is this pump an easy change a novice can do? If so, what are the best steps to take?

The change itself is straight forward. On mine, getting to some of the bolts was a pain, but I have an aftermarket bracket. It's just a matter of unbolting and rebolting. Should be instructions on bleeding the air out with the new one. After replacing two of them, I went with a heavy duty one from AGR, but they're a little pricey.

Is a heavy duty one needed for a cruiser/grandma-mobile?

Nah. Just get a rebuilt one from NAPA or some such. I think I had the belt too tight when the last one went out. I'm also running an AGR steering gear, so thought I'd match it up. :)
