I want to remove the dash pad in my 78 to paint the dash. Am I going to risk cracking the pad by trying to remove it?

No, you should be fine unless it's already brittle from being sun baked. Just don't forget to loosen the nuts underneath. I believe there's 5 or 6 in addition to the screws on each side. May also help to bend the tabs down a little (just enough to loosen them) under the dash while you're under there to remove the nuts. They just slide in to the openings but can hold pretty tight if it's never been removed before.
Other than that, tilt it forward slightly to get the pins out and pull it back and it should come out without flexing it.
